My younger brother is a gardner extraordinaire, and last time I was home in NC there were four watermelons ripe on the vine. My mom and I sliced one up and tossed it with fresh Feta from the Farmer's Market, mint from the garden and lemon juice for dinner with some of our closest family friends. That night we also added thinly sliced red onion- but I left them out of this rendition since pickled red onions were a key component of the main dish. This salad is sweet, salty and even a little sour from the lemon juice. It is seriously addictive - my friends had already eaten half of it before we even sat down to eat.
